I only really know how to bake one thing from scratch. But that one thing is a hit every single time I make it. I make it for potlucks, Thanksgiving, Christmas, my husband’s birthday, every event where I need to bring something. And it’s super easy.

I think the original source was this from AllRecipes.

I’ve adapted it to be the following:

Ingredients:

1.5 cups of all-purpose flour
1 teaspoon of baking soda
0.5 teaspoon of salt
1 cup of granulated sugar
2 eggs
0.24 cup of melted butter
3 mashed bananas
a dash of cinnamon (optional)
a splash of vanilla extract (optional)
Bake in 9×9 inch pan at 350 degrees F until golden brown and toothpick comes out clean from center, approximately 40 minutes.

Steps:

1. Preheat oven to 350F

2. Mash up your bananas. I have three large ones here.

3. Get your butter melted. (a quarter cup of butter is one-half of a standard stick) I set mine in the microwave for 15 seconds. It won’t be totally melted when it comes out of the microwave, but just set it aside while you’re working with the rest of the ingredients and it will be fine.

4. Measure out and add to your mixing bowl: flour, baking soda, salt, sugar, eggs, and butter.

Just so I don’t accidentally cook the eggs with my warm butter, I place them on separate sides of the bowl. (I have no idea if I could actually cook the eggs with warm butter, but I figure why take a chance).

5. Mix. I use a whisk. It will probably work just fine with a big spoon.

6. When it’s roughly mixed, I add the vanilla and cinnamon. Again, optional, but it gives the banana bread that fragrance that makes you go “hmm, what is that yummy smell?”

7. Grease your pan. I just use a canola oil-based cooking spray.

8. Pour in your batter.

9. By now, your oven should be pre-heated, so go on and stick the pan in there.

10. Come back and check on it in about 35 or 40 minutes. If you stick a toothpick in the middle and it comes out clean, then you’re good to go.

11. Set aside and let cool.

12. Tear into it like a beast. (or neatly arrange some slices on a plate… up to you)
